Panic to Pumpkin

Nana’s Apple Cake is always a crowd favorite, but when I needed enough to serve 14 guests, my baking plans took an unexpected turn.

I opened two boxes of the mix and diced all of my apples, only to realize they yielded just 2 cups. I figured it would still work out—until I reached into the fridge and discovered I was short two eggs.

Panicked but determined, I brainstormed a creative solution. Having successfully substituted pumpkin for apples in the past, I took a gamble and used pumpkin puree to replace the missing eggs. The result? A beautiful, cozy autumn fusion!

Here is the accidental masterpiece recipe:

  • 2 boxes Tastefully Simple Nana’s Apple Cake Mix
  • 2 cups apples, diced
  • 2 eggs
  • 1 cup pumpkin puree

Directions: Mix all ingredients together, pour into a greased 9×13-inch baking dish, and bake at 350°F for 45 minutes.
